Matt Freeman from Rancid, especially since most rock and punk bassists have boring and simple bass lines, he really stands out.

Almost impossible to answer, there are soooo many great players to listen to (and steal from :D )
I'll try to list three players who have made the biggest impact on me.

1. Anthony Jackson
His playing with Al DiMeola completely floored me when I was a kid. Still does. He changed everything for me. Convinced me that it was ok to play with a pick.

2. Bob Daisley
One of the funkiest rock bassists ever. Love him on the old Ozzy and Rainbow records.

3. Pino Palladino
This is a more recent influence. Just heard him with the John Mayer Trio. Oh. My. God. That tone! And the D'Angelo record Voodoo...forget it! :-)
Pino is the reason I put flats on my Precision.

There are of course many more players who I've listened to: James Jamerson, Billy Sheehan, Justin Chancellor, Joe Osborn, Willie Weeks, Steve Harris, Chris Squire, Roger Waters, Tony Levin, Lee Sklar...The list is endless.

Hard to limit to just 3, but my top 3 would have to be

1.Bob Daisley
2.Eric Avery
3.Simon Gallup

Other than that I'd say Nikki Sixx, Gene Simmons, Jason Newstead, Tim Gaines, Peter Hook, Rachel Bolan, Duff McKagan.....

2.) Calvin Jones - Muddy Waters Blues Band
3.) Larry Taylor - Canned Heat

(Rick Danko from The Band is a close runner-up)

Rick Kress--He was in a band with a friend of mine and he would go home and leave his bass at the practice basement. I would go down and plug it in and crank his amp and play ... alot !!!
Steve Fuller--I snuck in a bar when I was 16 and watched him play in a really good band from Michigan. I later on became good friends with him and we did gigs together.
Rod Underwood--we were 14 and his Mom bought him a P bass. I showed him how to play it. I didn't realize I could play bass at the time. 14 year olds can be dumb I guess.

Tina Weymouth, Carol Kaye, and Derek Smalls--I don't penalize Derek for the fact that the rest of the band helps out on bass on 'Big Bottom'. Derek defines how a bass player should LOOK--meerschaum pipe and all.

Simon Gallup (The Cure)
Peter Hook (Joy Division, New Order)
David J. (Bauhaus, Love & Rockets)

And another bonus 3:

Glen Campling (Tones On Tail)
Les Pattinson (Echo & The Bunnymen)
Mick Karn (Japan, Dalis Car)

It is all of those who really are an influence.

Let's see here:

1. JPJ - Obviously hearing the breakdown in Lemon Song was a defining moment for me as a 14 year-old aspiring bassist, but really, he was the first bassist I ever heard who...well, who I ever HEARD, loud and clear. Plus his playing always seemed to fit the music perfectly without overpowering it or drawing too much attention to himself. I still love playing Good Times, Bad Times 30+ years later!

2. Steve Harris - as a junior-high metalhead in 1983, I worshipped Iron Maiden. However, I didn't really "get" what the bass was, and even though Steve's playing had (has?) this clanking "metal" sound that I loved, I had no idea that sound was coming from a bass. It wasn't until I got the tablature to Run to the Hills that I realized what was going on. My first major bass influence, no question, as well as the guy who made me really care about fingerstyle technique (I started out playing with a pick, but after seeing the Number of the Beast video, I decided that "real" bassists use their fingers, although now I know better).

3. Cliff Burton - Kill 'em All came out when I was about 14 and changed my life forever. However, in terms of bass, it wasn't Anesthesia (Pulling Teeth) that made me go "woo", but Jump in the Fire. Seriously, I would play along with that song every day for months, and when Ride the Lightning came out...wow. Even though the bass was harder to hear on that album, every time a transcription appeared in a magazine, I'd buy the magazine and learn the bass part immediately. I was always blown away by the uniqueness of his lines and how he was less concerned about following the rhythm guitar than playing something which, to me, was completely out of the ordinary. I still consider him the Beethoven of metal bass and understand why none of Metallica's post-Cliff bassists have been able to make people forget him. He didn't just play bass lines; he composed them.

Honorable Mention: Bob Daisley (on the first two Ozzy solo albums) - those albums were a huge part of my junior high experience, and even though I didn't appreciate him back then, I definitely do now. Tasty, refined, and really, just the perfect bassist for that band. Obviously Randy was the star, but the rhythm section on Blizzard and Diary provided the foundation for him to soar.

1. John Paul Jones, for groove, feel, tone, arrangement, for playing for the song, not the ego.
2. Geddy Lee, for just ROCKIN' OUT!!! Every song just teems with fabulous bass riffs, for doing his (their) own thing.
3. Steve Harris, for awesome songwriting, composing, every song just grabs you by the throat and shakes you.

All these players to me have larger than life tone, individual style, contribute on a huge scale to the sound of the band and are phenomenal players!

Special shout out to James Jamerson, Jerry Jemmott, Duff McKagan.

3. Paul MC Cartney

I believe though I have learned from every bassist I have listened to & from all genre's of music. No matter if it's Country to Punk there is always a bass guitar to listen to remember that 8) .
