Assuming its a Standard size & type of Allen (or Hex) wrench, what size is used to mount the bridge into the "thimble" seats?

If it's mm-etric, your best bet is 1,5 mm. If it's imperial, .050" should do the trick.

Hint1: Somebody may already have accidentally rounded the hole - happens more on truss rod nuts, but is quite common with older saddle screws, too..
Hint2: If unsure, or otherwise have problems, taper the end of a wrench that's a little too big. Better yet, buy a set from StewMac specially designed this way.
Hint3: Sometimes a Torx head helps when hex keys fail.
