What makes them "rock"?

All they've done is replace the original crappyass trem tailpiece with an equally crappyass Bigsby tailpiece.

I don't like 'em either, but I'm going to disagree with Retroverbial: All they've done is replace the original excellent tailpiece with a clunky, less-versatile, homely alternative. (They also ditched the rhythm circuit and relocated the big switch, but those aren't necessarily bad things.)

The original Jazzmaster/Jaguar tailpiece is a beautiful thing that works extremely well if you set it up properly. It's the bridges that needed work. (By "work," I mean "tossing in the trash," of course. Thankfully, here in the second decade of the 21st century, Mastery bridges exist.)

It's always been the poorly-designed bridge which doomed an otherwise fine guitar, not the tailpiece.

Be that as it may, the Bigsby does absolutely nothing for the Jazzmaster other than look rudely out of place.

I don't think I completely agree. One of the main objections to Bigsbys is that that they are so big and take up so much space. With a Jazzmaster, you already have a football field of space below the bridge, where a Bigsby isn't so much in the way as on most other guitars.
And it's not like the original tailpiece has been without its own problems, some of which the Bigsby will alleviate. With a Bigsby, the trem arm doesn't suddenly become loose and floppy while you play, for example. It's a solid piece of hardware, for better and for worse.

My main objection with most new Jazzmasters are the "P-90ish" pickups that I don't really think sound like P-90 pickups. I love P-90s, but not these overly hot and harsh sounding ones. I don't think Fender has gotten P-90s right since the CBS days.

Well, for starters, Jazzmaster pickups aren't P-90s, never were P-90s, don't sound like P-90s, and weren't ever supposed to sound like P-90s. They sound like Jazzmaster pickups. The current AV65s sound almost exactly like the ones in my '66 --- they're absolutely "right".

The Jazzmaster's pickups were never meant to emulate the fat rich tones of a P90 nor do they. To my ear they're at their best when played clean through a Dual Showman a la "surf" music. They become very harsh and raspy when pushed through an overdrive pedal or a fuzzbox.
