I'm putting together a Tele (an old neck, Squire body, brand new pickups, and a new control plate that's already wired up with new pots and a 3-way switch).
Everything's fine, except at the middle position, I don't get anything. How am I shorting this out? Thanks in advance.

You'll want to past some pics so we can see what you're talking about.

Just think of how awesome a guitar player you could have been by now if you had only spent the last 10 years practicing instead of obsessing over pickups and roasted maple necks.

With the 3-way switch in the middle position, I should be getting a signal mix from both pickups, right?

Take a look at the wiring on the switch. It should follow this diagram.

This is a new-fangled switch with all 8 poles on one side, not the usual 4 on each side.
