Does anyone else find the "modern C" profile to be too thin? Even the vintage "V" profiles seem too thin. I found myself replacing my Telecaster and Stratocaster necks with Warmoth boatneck/fatback necks. Anyone else have this problem?

Yes I have the same problem. I have a Tele Custom made in 1973 that neck is very thin. I tried a new Tele and the same problem, I love the guitar and bought it new, I never found any replacement neck that is better. I have the same problem with my 1985 Stratocaster MIA.
My ESP, Brian Moore and Les Paul are perfect for my hand. They are set necks, I have never seen a bolt on like them.

Yes I know what you are talking about, I have not played my Strat in a few weeks. After reading reading your post I got out and played a couple hours of aGary Moore. I can get some sound out of that guitar. I have been playing my ESP semi hollow body a Xtone. And my Brian Moore solid body most. I did have fun with my old Fender. Tele needs a bit of work over the week end.

I guess many of us have the same issue with most Fenders. Many Fender guitars are meant to cater to the fast finger shredder guys. That problem leave us with either buying after market necks or buying expensive reissues...

There's very few manufacturers that give accurate info about neck profiles. It seems to be their black voodoo that they like to keep mysterious. My LP with a '50's neck measures out no more than my Am Dlx with a modern C profile. Fender has quite a few larger necks spread around their models. You just need to seek them out. As to whether it will cost a little more to get one is kind of an arbitrary statement, but usually if you are picky about details you will need to spend more to get what you want.

That is true, you really need to play the guitar for many reasons this is one more. Get it right the first time. I bought only two guitars that I did not see before I bought it. I was lucky that it had honest people selling to me. Both were perfect.

I float back and forth, my home built strat neck is huge, my american tele is about the same width but a little less thick in the hand. My MIM tele is super small.

I think lots of us play in a style where we fret with our thumb. When doing that, you don't prop the other fingers against your thumb, but against the palm of your hand and arch between your index finger and thumb. Then a somewhat fatter neck is helpful, and a too flat neck can be a big pain, literally.
Especially with big hands, thin necks can then be hard to play. Unfortunately, a large part of the demographics for selling Fender guitars is to teens with smaller hands. But at least the more expensive models tend to be slightly better for big hands and thumb fretting.

I've thought more than once to get rid of my MIM Tele Thinline '72 RI for that reason. It truly hurts to play the thin, narrow and slick neck for any length of time. But the build quality is so terrible on that one that I don't want to foist it on anyone else either, unless they have a knack for fixing problems as they surface. Modern Fender QC is definitely not something to brag about.
I do love its vintage frets, though.

I bought my Gretsch CVT after a 30 minuets of playing it, the fat neck was a big part of liking it. That was in 2009 over the years since I have had so many little things go wrong with a guitar I wanted for years. Made in China at is best, I fixed all the stuff myself because I do not trust the kids they hire. I was playing a gig past Saturday night when a tuner fell off. This piece of junk was $700.00 a lot for a working person. I am going to get beat but a trade for a Jay Turser 133 semi hollow body is in the wind. I cannot worry of stupid stuff walking on a stage. Check out you soon to be new guitars very well and take them back at first sign of trouble. Not like a me.
