I will be picking up my new American Deluxe Tele this weekend. When the "techs" take it out of the box, what "set up" is done to a guitar? Do certain models come more set up from the factory than others?

I don't have much of a clue as to the set up process, so if anyone could help me understand, I would be most appreciative.

A lot of guitar makers do just a rough setup at the factory. It might be wise to spend an extra bit of cash and have the guitar set up. Also I know some shops will actually offer a free setup with the purchase of a new guitar, you should ask about that when you pick up the new guitar.

Factory setups are just basic setups of the action height, neck relief, and intonation. Once they're shipped, they are bounced around in a truck for however long it takes to reach the destination. That don't do any setup a lot of good, obviously. Some dealers will check out the guitars they get in and tweak the setups before they go on display. But while they are on the sales floor, before they're sold, they may be subject to anyone and everyone playing them and they can get way out of whack. So, IMHO, it's always a good idea to have a new guitar professionally set up, if you can't do the work yourself. Makes for a better playing guitar and you'll be happier with it. As Tim said previously, some dealers will do this free when you buy a guitar and others will charge you a modest fee for doing it, but it's well worth it, even if you have to pay a little.
