So I've decided to go with a Firebird Style GFS Mini Bucker (7.55K) in the neck and a GFS 63 "hotter wind" bridge pickup (7k)...my question is this, what value caps and pots should use to wire this up? And how exactly would I need to wire it up? I was planning on going with a simple 3-way switch unless I'm overlooking the benefit of using a 4-way. Any help would be greatly appreciated, Cheers!

This pair of pickups you've selected clearly are of a higher resistance than OEM Firebird pickups. Consequently, you are now in the realm of full sized humbuckers where for best results dynamically, you're 'obliged' to go with 500K pots. As to the cap value, the overwhelming majority of pickups and pots with these resistances typically use a .022uf cap.

I presume you know how a 3 way switch works. With a 4 way, you get the same as a 3 way with that added position yielding a thick sounding position #2 of a 3 way. Some find it useful, some don't. Regardless, it is nothing that can't be changed later if it isn't for you.

As to how to wire it all up, follow this diagram where of course, you would be using the aforementioned pot/cap values:
