It's funny-the latest issue (Feb 2008) of Guitar Player has an article about tone woods, good info there. You can always Google for maple and rosewood guitar tone woods, there are quite a few sites out there that can tell you the differences.

At the end of the day, it's all up to personal preference.

I originally chose Maple cause that's what Eddie VanHalen had.

I was young.

Eventually, I tried a rosewood neck and didnt like it...not smooth enough.

I liked the slickness of maple. So at the end, it had nothing to do with sound, but with look and feel.

Rosewood is dark and more porous, usually a separate piece of wood mounted onto the neck. Most maple boards are part of the neck itself. They say maple has a brighter tone, and rosewood has a warmer tone. I have 2 Strats, one of each neck, and I really cant tell a tonal difference other than what the different pickups produce. For me it is a matter of look and feel. I have to give the edge to the rosewood, but I like both.

Typically the maple neck can make an axe sound a bit more glassy and a rosewood neck can make for a warmer sound. Rosewood caps were introduced because maple showed wear and also wear down faster as the wood is a bit softer.
There is also the overall look differential.
So sound, wear, and look are really the main differences.
Other than that it is a matter of personal preference! 8)
