Is it possible?

Also, to change the neck from maple fretboard to rosewood fretboard, is it labor intensive, and would I be able to do it myself?

As for switching necks - sure, you can do it yourself. Obviously you'll have to reset (or at least check) your saddles for action and intonation, and you might need to adjust the truss rod of the new neck. If you feel comfortable doing those things, go for it.

One thing I always do when installing a neck is get the screws almost tight - maybe a half-turn away from fully tight. Install strings and sight down the neck like you're aiming a rifle. Make sure the E strings are equally spaced from the edges of the fingerboard before tightening the screws all the way. Often necks like to tilt to one side, usually the high E string side, and then your high E string will be "falling off the neck" at the higher frets.

Make sure the neck is straight and then tighten the screws all the way.

It's easy!
