I've long been a fan of open G. Over time I've used it not only to cover Stones songs, but to write my own as well. Most of the time I keep my Les Paul in open G, but I don't generally take off the low D. I had 5 strings on my old Harmony Les Paul copy for awhile, but it's hard on the neck -- Keith's main open G guitars are all customized to have equidistant strings and a brass nut/saddle combination. I think the best thing to know about playing in open G is that you can, in fact, go beyond the I-V hammer on. My favourite little trick, which also makes appearances in Keith's playing, is this shape (from low to high): 000320. Similar to the V shape, but not quite.

And for the record, $@!&* is not actually played in open G. I'm not a stickler or anything, but on the record Mick Taylor played the main riff on a humbucker-equipped guitar in standard tuning, and Keith riffed over it, also in standard, with what sounds like a Strat to me. It's centered around the A pentatonic, if you're interested.

There have been stories floating around the internet forums that the saddles and nuts on Keef's guitars are relocated to space the strings equally across the fretboard, if this is what you mean, well I think you'll find that the supposed moving of the strings on the nut is a myth, not truth. All photos I have seen of his various 5 string guitars merely have the low E removed and the nut / saddles are normal.

Here are some photos which show this (forst two photos taken by "Blackguard Bob" from the TDPRI Forum)

I play a MIJ replica (TL-67) of "Sonny" with 5 strings when my bands play live, for "Brown Sugar" and "Honky Tonk Woman". Other songs which are great for a 5 string in open G are Rod Stewart's "Hot Legs" and John Mellencamp's "Pink Houses".

Here's my Sonny replica...
