Ok, so, let's say that I am going to meet the guy.

In person, with the instrument in my hands, but unable to disassemble to check the pocket and to check for markings in other cavities, ---
what kind of stuff do I look for (Fender specific stuff, not general guitar stuff) to help determine authenticity vs fakes and mutts.

Mint is a word that takes its roots from the coin manufacturing industry.
If a coin was mint it meant there were absolutely no deviations whatsoever from a perfectly minted coin.
I meant more than just no marks.
It also meant no voids, no impurities, no inclusions, no misformed areas.
It meant perfect, as new.

A modded guitar cannot be called mint.
It can be in excellent, condition.
It can be like new.
It can't be mint.

I understand. Thank you.

Only so much you can do without the autopsy. Checking the serial number with consumerrelations@fender com might help, they usually can provide specs belonging to a serial# from that period.

Based on the ad pics, the guitar look as it should - and has some signs which I've never yet seen on a fake.
I'd call it legit as in "all Fender". It could be a Partscaster, but the color matches the timeline - and anyways, all Partscasters can't be found even when checking the neck joint or wiring...
Ask the seller about the history&background, especially those Noiselesses.
And you might try to negotiate the price - mint vs modded etc.

But most important: use and follow your instincts. If at any point you start feeling something ain't as it should, just walk away. Plenty of Teles for sale.

Yes, for an item to be mint, it generally means that a subject matter expert has determined he or she is unable to tell it from an item straight from the factory.
An item being mint can significantly increase the value versus one that is merely in excellent condition. I have a couple of identical Lesney Matchbox cars from the mid 60s. One is flawless, and the other one mint. I have a hard time telling them apart, but one is worth $50, and the other one $150.

Similarly, "antique" is often misused. There are no antique electric guitars yet. Try to import an old guitar as antique, and you'll find you have to document that it was made before 1917. Some are vintage, but most of them are just old.

Here's the highlights of what Fender had to say:

Manufactured 02/2001
Model Name: American Telecaster®
Model Number: 011-8400-(Color#) and 011-8402-(Color#)
Series: American Series

Bridge: American Tele with 6 Stainless Steel Saddles

Pickups: 2 American Tele® Single-Coil Pickups (Neck & Bridge)
Controls: Master Volume, Master Delta ToneTM
( “Delta Tone” system includes high output bridge pickup and special No-Load tone control)
Colors: (715) Hot Rod Red, (Disc. 1/2002),
(Polyurethane Finish)

=======================
So, I assume the Delta Tone is the reason for the little nudge at 10. Like a push/pull pot. A damn guitar with child proof cap, lol.
It is Hot Rod Red.

The pickups say Noiseless on them (I did not pull them out). Are those what's listed above?

No, those are not original for this guitar.
Fender's Noiseless pickups are really stacked humbuckers in a single-coil package. They change the character of the sound quite a bit. You get less noise, but also lose some of the biting treble "twang" that Telecasters are known for.

^ ... which is why I personally would not have any interest in this guitar ...

If the ad raises my eyebrows, I look elsewhere.
It's a Telecaster.
It's not like there aren't 5000+ used Teles on the market at any given time.

Just think of how awesome a guitar player you could have been by now if you had only spent the last 10 years practicing instead of obsessing over pickups and roasted maple necks.

Some people do this things called "lying".

Just a clarification: the little nudge is the No-Load tone potentiometer "turning itself off the circuit". No-Load pots can be used without the Delta-Tone™ system - and since the pickups have been changed, the wiring may be different from original, too.
