I drink my tea black without sugar.
How do you like yours?

It's not a case of which one's better, it's a case of which one do you prefer.
I would go for the SSS config, but I'm not you.
I'm also not particularly keen on Fender humbuckers - if I were to use HSH config I'd want pickups with more character.
My choice of humbuckers would be something like a Gibson 490T and 490R, with auto coil splitting in the 2 & 4 positions, and maybe an option for coil splitting in the 1 & 5 positions too.

I drink my coffee black no cream or sugar. I also have 2 guitar one SG with 1Gib Classic 57 Neck and one 57 plus Bridge , and 1 American Standard Strat with 3 fat 50's. That way I have a choice
The Am Stranded is a nice guitar but you need to make your choice on Pick up Configuration I say go out and play some with the amp you have or are going to get and see what you like

Those Fat 50s pickups are very nice indeed!
Look at the FSR Standard in vintage white - a good friend has one of those, and it sounds sublime :D

Well, I like it!!

You really do need to try out both and see which one works/sounds best for you. They're both very nice Stratocasters.

The SSS is going to give you that "Ols-School" classic Strat sound over the tones you'll get out of the HSH. The HSH will have more bottom/mid and push harder in the bucker positions.

Considerations...
will you be using a lot of distorted tones... high gain tones etc?.... do you want a quite pup?... Then the HSH may be better... Do you want that "Spank" and "Bark" that you get from a single coil pup? Are the effects you'll be using going to be workable if you have 60 cycle hum in your signal etc...

This sounds very much like my strat that I currently use with an HSH configuration. However, I did replace my stock pups with Lace Hot Golds (same configuration) to gain a bit more output and clarity.

I use this mostly on blues, funk, country, and jazz. It's actually a very versatile configuration. You have to bear in mind that the only time you're actually using humbuckers as humbuckers is in switch positions 1 and 5. Otherwise you're using single coil configurations due to the split coil wiring just like a traditional strat. The advantage I gain is I can use the neck humbucker as a fill-in for my LP in a pinch. I never was a fan of the bridge single coil as it seemed a bit tinny to my ear, so the bridge humbucker mellows that out quite a bit.

I have an American Standard in the HSS configuration and it's a wonderful combo. Seems like a good compromise between the HSH FSR and the American Standard SSS. So if you still can't make up your mind, I'd get that. Or better yet, I'd try all three out and then make your choice.
