I was wondering how much distortion can single coil pickups handle with out 50 Hz / 60 Hz hum or any unwanted sounds?

There's no need to go posting this all over the forum!
All single coil pickups will pick up 50/60Hz hum. If the pickups are RWRP relative to each other they'll be relatively silent from an unwanted noise perspective when the between pickup position is selected.

Now you mention distortion - if you're intending to play with a heavily distorted sound, what difference is a little 50/60 Hz hum going to make?
Probably very little 8)

OP probably means gain, which probably results in distorion. The more gain/distortion the more hum from single coils especially hot single coils...ie Texas Specials. IMO

There are many players in the world who get heavy distortions out of the single coil, just plug into and AMP and play around with it.

I stuck a Lil pearly gates in the bridge of my strat, it bucks the hum and being a medium output pup, it still sounds stratty. It's not as gnarly as a Lil jb.

As Yngwie has been a long time user of stacked humbuckers there's probably no need to ask what he thinks ;)
