WOW!

Picked up a gorgeous looking sunset metallic USA Strat maple fingerboard and damn its just dreamy!

Just wondering how do shops typically clean them?

Shops (or at least my local shop) usually clean them with guitar polish and a polish rag. Apply a few drops to the guitar body or rag and polish like anything else, slow and controlled. Also remember to cover the pickups to prevent them from getting wet. Hope this helped a little :D

When you say "shops" I assume you mean sales. AFAIK they use Pledge or similar on a towel and wipe it down.
If you are asking how to clean and polish your guitar, Dunlop 65 guitar polish and cleaner is great for really getting in there and cleaning out any grime, while the Dunlop 65 string cleaner and conditioner will pretty much keep your fret board clean too.
I use liquid car wax on all finished surfaces on mine.
Stay away from any lemon cleaners on your maple fret board.

Get a nice microfiber cloth (or two).
Just a little hot breath and elbow grease should do the trick.

The Music Shop I worked in, it was pretty standard for all new guitars coming in. A check of the intonation, tuned with a Peterson Strobe Tuner, and a wipe down with a dry polishing cloth. Every once in a while if we got a rosewood board guitar (Fender or Gibson) that was really dry, we might do a wipe down of the fret board with some lemon oil (which is really just minerals spirits). No big secrets, just some common sense.
