I was looking at various flavors of Strats on the website and found the natural ash body Strat with a rosewood neck. To me, it looks like a really cool "old school" version from back in my high school days, but built with more modern technology and features.

My main concern is the 3 bolt neck... I remember back in the 70's, some of them really sucked, and the neck joint was really weak and would bend at the drop of a hat. Is that the same problem in today's world?

No problem with 3 bolts , 3 long screw is enough for your need . I have one of those vintage , an original 1979

I don't know about bending, but shifting could be a problem if you don't keep the bolts/screws tight. I learned that one time.

The MIM Classic Series '70s Strats have a higher and much more consistent build quality than the CBS-era instruments they are intended to replicate. I don't think you have anything to fear. And these contemporary guitars use a standard vintage-spec steel bridge assembly, which is much better than the cast Mazac parts that were used on the originals and routinely maligned for the sleazy nature of their construction and durability.
