I recently read that my G&L S-500 has the middle pickup reverse wound so that it creates hum-cancelling when combined with either neck or bridge pickup. Are all Strats wired the same way or is this unique to G&L's?

Lots of Strats are wired that way, except for most (if not all) of the vintage reissues.
