I have my Fender Classic 70's Stratocaster RW OW with stock pickups for some years. So I'm thinking about the pickup replacement to play some hi-gain metal like Iron Maiden or so, but I don't want to loose the great qualities of Ash Strat sound on clean and overdrive. I'm not very experienced in electrics.
I have such ideas:
Lace Sensors Gold as noiseless single coil pickups (I'm not sure of hi-gain, but it should be great on clean or drive)
Seymour Duncan YJM Fury (yeah, Yngwie's ones single coil humbuckers as far as I know)
Or
Seymour Duncan Hot Rails (they are very powerful humbuckers and great for hi-gain, but I'm not sure about playing on clean or drive)
So I'm not completely sure about those variants.

PS: I played once American Standart Hand Stained Ash Stratocaster HSH 6 months ago and I really enjoyed the sound on drive.

I'll respond regarding the players you've mention:
For Iron Maiden you need a humbucker in the bridge - I think that Dave Murray currently use the Seymour Duncan JB Jr. The Hot Rails would also work though. Their 'classic' tone was produced from the normal size Dimarzio Super Distortion humbucker.

Yngwie also plays metal with Strats but his pickup model will respond differently - it's not a hot humbucker that drives the amp.

By the way - while rhythm for Metal is almost strictly the bridge pickup both Yngwie and Dave solo while using the neck pickup a lot though, so does Steve Morse, for example. Many other metal players stay mostly with the bridge pickup so the neck pickup might not matter here... depends on what you're looking for.

I mean something about today's Maiden. So that's why i hve an idea os Hot Rails or JB Jr. but will i have classic strat tone on less gains?

That's right, but I also use neck pickup quite often, that's why I asked about differen variations. Yngwie has something about recognizable strat tone which you can get with regular singles, but with a little more gain.

Also Roland Grapow from Masterplan (ex-Helloween) used Yngwie model and Strats with DiMarzio YJM. Some years ago i asked Roland if he played with ash strat and with YJM pickups. So he told that he plays ash strat with stock pickups. The reason why i'm not sure about YJM pickups is ash body (yeah there are tons of pickup demos on youtube with alder-body strats). Another reason is that i heard that their output is not so high.

Some advise to use Seymour Duncan SSL4 singles with high output.

Split, and with a middle true single coil in the notch positions - the Hot Rails have an "airy"/"woody" Strat quality... but this is not what purists look for.... :) I think that there are demos on Youtube of the HR split.

Dunno about the SSL4s.
Don't worry about the ash vs alder thing. You'll find a lot of threads regarding the difference wood makes... the opinions go from "none" to "some, but very slight". You should get what you're looking for, if you're looking for this tone. I read that Yngwie did want them not to sound like a traditional Strat.

Maybe, if it's an option - start with a bridge pickup and then work out what you want for the neck and middle?

Will I get the strat tone on overdrive(something about Deep Purple/Rainbow or Yngwie) with Hot Rails or Jb Jrs?

You can make classic Deep Purple songs sound good with humbucker pickups, Steve Morse does it pretty well. But generally - no.
