I have a few questions about string saddles. First, what is the appeal of bent steel string saddles? I thought block saddles were an improvement providing longer sustain. I have also noticed on a lot of older Strats the bent steel saddles catch a lot of dust and dirt and rust. I wouldn’t think that would be very good for tone. I have seen in the forum some people express a preference for bent steel , is it an “Old School” or Fender purist thing? If so that’s cool, you like what you like. Second, I have also noticed that some of the block saddles are described as milled and some are not, does this mean that some are cast? Final question, some block saddles have the intonation adjustment in the center of the block and some are offset, why is this?

There are no good answer when you talking about tone or bended steel saddle versus block saddles.

it is a matter of taste and ears and experience .

I think Fender went back to the stamped steel saddles for the same reason the custom shop's main business these days is making relic'd instruments. Most people want something old school style. As far as tone goes I believe you are correct in the solid and heavier modern saddles providing slightly more sustain although I'm sure some would object to that assertion, insisting tone comes only from the pickups. IMO the solid saddles are better sounding but YMMV.

The block saddles may or may not sustain better, but the bent steel saddles are more cool looking. 8)

Solid saddle - mellower tone. Bent steel - brighter tone. Solid steel block - brighter tone also. It's just one of those phases the populace is going through. They will be back to the solids in a few years.
