Yah, that was my first thought as well.
The only rusty strings I've ever seen were on a guitar that sat for years in a basement and then one other time when I made my strings rusty by accident.

(I was young and poor and needed new bass strings so I boiled them, which was a fairly common occurrence for me at the time, but this one time I had the hair-brained idea to drop a capful of bleach into the water to get them really REALLY clean.)

While this is certainly true, it won't change the chemical composition of the sweat very much.
I certainly have changed my diet several times in my life.
For one: eating habits change while you grow older.
Second: due to my job I travelled a lot. The diet at home (Germany) certainly is different from a diet in USA (7 months) or from the diet in the desert of Ethiopia (where I lived 16 months).
I've been to Iran as well.
I certainly changed my diet over the past 30 years of playing guitar out of eating habits AND(!!) because of very different places where I stayed for longer periods of time.

Diets changed, my sweat didn't, at least not to a recognizeable degree.

Some people tend to have a very smelly sweat (I don't even smell after 3 days in the desert without chance for a shower!! Others smell like pigs just 2 hours after taking a shower!) and some people tend to have a very agressive, acid sweat (I do!).

I can't even wear 925 sterling silver jewellery, it turns black within a few weeks and the surface is literally eaten away, so that polishing doesn't help. The surface is damaged!

Same happens to my guitar strings.

You can have an influence by changing your diet but to a very small degree only and mostly just in regardance to the smell producing composition. The acid producing components are genetic, I guess (without using Google to confirm).

I'm not sure if it's directly associated with your diet. But some peoples systems seem more acidic.

I have a friend that he could pick up a guitar with brand new strings and within a few hours the strings were practically dead. I used to accuse him of eating pancakes will his hands. His sweat almost ate through a vintage style bridge.

I've used D'Addarios for years with no problems. Very rarely do I wipe them down after playing or worry about them. Usually I can go quite awhile without a string change.

Several friends of mine, during gigs or rehersals, keep thier hands washed frequently to help keep the strings cleaner.

Switch strings, wash your hands often when playing and see what happens.

If you are like me and suffer from sweaty hands then I know exactly what you mean. I have taken to wiping my strings down with a clean cloth after I have finished playing - you would not believe the crap that comes off.

My strings last a hell of a lot longer now, which is nice! I use Ernie Ball strings if that makes any difference.

Yes for sure. I use Elixir strings. I, like yourself have the same problem. My hands sweat.
The two most important things to have your strings last is to wash your hands before you play your guitar, and when you are done playing "I use an old sock" pinch each string and go up and down the neck a few times cleaning them off. Do this, and they will last you a very long time. Same goes for non coated strings as well.
