I'm going to turn my strat into my Rolling Stones guitar. What string gauge do you recommend?

The same you used until now, except if you might wanna play slide. In that case I'd go for 12s or 13s.

Don't forget - do not put on the Low "E" string. Keith never did like that string.

Lets get serious. At the times the Stones were a new band, standard string size was 12's. If it were me I'd go with 10's in today's strings.

A really good set of strings for playing slide with is the D'Addario EXL-110-W set which has the same string gauges of their other .010-.046 sets with the exception of the 3rd string which is wound and not plain like all their other sets of this gauge. The usual plain string in these sets is .017 but the wound 3rd is .018 and it has a lot better responsiveness than the .017 plain. These strings are very well suited for playing the standard way if the need arises and the wound 3rd is very supple and bendable for a wound string.

I use 11-50 for slide and I use open G--I like them...

I switch back and forth from Open G to Standard. The gauge isn't a big deal unless a slide is involved. You'll want a heavier gauge string because you don't want the strings to be floppy or bend under the pressure of the slide and fret out. But for you Keith Richards desires, keeping what you have should be just fine.

I would have thought they were 10's based on my personal experience in those years, unless the Brits were using something different.

I was just thinking about the sixties and the British invasion and pondered that aside from a handful of innovative guitarists, not only were lead riffs typically very simplistic in those days, but there was very little in the way of dynamics like hammer-ons and pull offs, harmonics, slides, and string bending. I pondered if this was an evolutionary thing or a technological thing like heavy strings were all they had. Hmmmm.

Hendrix used banjo strings so he could accomplish all he did...
