I know I've seen some threads on this but can't find any that answer the question that if I turn it around would it cause more noise for the guitar? Does it cancel the noise that much? Oh and does it really change the sound that much?

You can try it, but if I remember correctly you can not just swap the wires on a 2 wire single coil pickup.

Why not? What else could it possibly be?

You'll end up with out of phase pickups in "the middle positions."

I had to call a pickup maker friend of mine to get the correct answer. If the pickup itself is shielded, just swapping the wires will not work. Stock Fender pickups are not shielded so swapping the wires should work.
