Yeah. Some of my favorite instrumental Jazz songs are instrumental
covers of known standarts. I really enjoy vibraphone, low breathy sax
and low piano "midnight - after hours" mellow soft jazz.

I enjoy some guitar jazz as long as the pitch/key/tone(s) are not irritable.
Same with trumpet or clarinet jazz.

I am purchasing a baritone guitar just for the reason for lower tones.

I believe covering Dylan songs would be a step better than Beatle songs.
Not for recognition of the song, but for chord structures.
and, of course, the Beatles used some great chord structures as well.
