Of course you could....with a HSS strat that has a pickguard or rear routed body?...If with the pickguard you'll have to make a custom one then...

The Tom Delonge Signature Stratocaster has what you're looking for. It's not hugely expensive either!

I second what Belphedeus says. You can make one out of an HSS strat, you just nix the middle and neck position pickups and keep the humbucker, then get yourself a pickguard to match what ever look you are going for. I knew a lot of guys who have done it and were happy with the end result. Finding a pickguard is not that difficult. 8)

year thats what i was thinking i'd do. One pickup is all you need, thinking of putting a seymour duncon phat cat or a gibson 57 humbucker.

what about disabling the pick-up selector?

Yeah you can do that. When you remove the HSS and PG with the original pickups everything is pretty much attached to the pickguard, I would store it way just in case you ever wanted to switch back or sell it. Get your new Humbucker of choice wire it to a 500k pot for the volume and the other connections and Voila it's done. You'll Just have a volume knob for your Humbucker. Check this out, here are the single humbucker PG's they also come in white and pearloid. Btw, there are other sites as well that offer PG's.
