I've read from a few people that Mexican bodies are (or were) partially made of plywood? Are they solid wood (Alder, etc.) similar to American?

The majority of the ones that I've played have been either alder or ash. The MIM ones have had more pieces than the MIA ones. I've never heard of a MIM body of plywood.
