I use five of the stiffest springs I can find and crank them down.

I don't think it matters, if you are cranking either type of springs so that the bridge is flat against the body it ain't going to matter how much tension it does or doesn't have. You can't go past that point of resting flat against the body anyway.

This is true but you get a bit more of that cool sound from the stiffer springs. That kind of natural spring reverb.

Question here,
I take it I have got it wrong then, 'cos I just put 2 silver springs on, with the 3 black springs, when I cranked the bridge down?
Maybe that's why the guitar is always going out of tune.
I seem to have to tune it every 10 mins and I always find the bottom E, A, D and G always need fine tuning.

I assumed that the only difference you would see with the bigger springs would be stiffer trem action when using the bar.

I can't see mixing springs causing the tuning issues if you have your bridge flat against the body; but it could be possible.
