Not to be contrarian here but this subject has been debated on multiple threads.
Do a Forum search, you will be busy with reading for days..
On Acoustic guitars, it is pretty much settled, on an electric....That is a whole other discussion since build quality and components critically affect sound results...
the subject is not comparable Acoustic versus Electric since string sound is amplified in very different methods, One mechanical, the other strictly thru electromagnetic fields.

But read up and draw your own conclusions....Happy Search

Hey Jay - good to see a familiar name back in these parts!

You can't go wrong with ash or alder. Of course and as always, IMO. :D

Id say Alder because it only gets brighter more accoustic over time and that is stratty if you like the lower end than mohaganny is the way to go.Speaking about alder, why is there not an alder accoustic??I think it would be great to use!!

Not in an acoustic. We are comparing two methods of amplifying an oscillating string, one electromagnetic,( Strat or any hardbody electric ) the other mechanical where the acoustic box is made up of sides, back and top. The top being the thinnest vibrates from the string motion as well as the back, those vibrations affect the air inside the acoustic box and simply put it is all projected out thru the soundhole.

The difficulty is getting the components and the design correct so that you have a projection of the optimal sounds we seek in an acoustic.
Alder is not well suited as an acoustic top, due to its grain pattern. So far Spruce has been the leading best, ( Violins, Violas, Cellos ) in acoustics Cedar and sometimes Koa but overall Spruce and its many species has won hands down..
Easy to work, but most importantly it can be shaved down to a thin 1/8th of an inch or less, reinforced by bracing. Spruce has a very straight grain pattern, Alder and Ash do not, which means that when your top is planned to thickness, the fibers or capillaries of the top must run perpendicular, not twist or change direction up or down ( looking at a top from it's edge )
that would result in a top that splits...

I found that a few pic years ago. If memory serves I believe it was found during a search of the Mike Meyers movie.

Speaking of couples....
I'll see your "stays together" and raise you a "Dutch Oven".
