Because it can be hard to get the amount (dimension) of said wood out of a nice piece of straight grained wood (of any species). Tree wood is a funny thing when it comes to warpage. What appears like a nice straight (non warping) chunk o' wood can end up fooling you when it, for instance, gets a change in its' environment. Laminating the pieces together cuts down on these possibilities because the pieces are smaller and therefore don't have the opportunity to warp as much. Also the glues are so good these days that if one piece DID want to warp, it would have a lot of resistance because of the bond to the next piece it is laminated to.

Unless the woodgrain is visible, it is just a manufacturing process to get a stable, (which is what you want more than anything) instrument.

I am one of those that believe the tone comes almost completely from the electrics in an electric guitar. There might be very slight differences but really, REALLY hard for the human ear to notice!

Acoustic instruments - different thing.
