I've been playing guitar for quite a while and have gone through a number of styles before coming to the classic rock/vintage style.
I already have a Line6 Variax 700 and an Ibanez RG 7-string but I'm wanting something with more of a vintage sound.
If anyone can help me pick a good Strat for this I would appreciate the advice.

I know everyone says this, but that is because it's true. Go to your local guitar store and play as many guitars as you can until you find "the one."

I would also recommend playing them all through the same amp because the amp can change the sound of the guitar greatly. Just make sure you compare apples and apples.

Go to your local music store and play a bunch of Strats. I only play the US made ones but that's just me. The MIM's and MIJ's play just fine. You'll find the one that sounds best to your ear and feels best in your hands.

If you want a "vintage" type Strat sound stick with the 3 single coil models. A nice maple neck is very bright and "twangy" too.

You gotta play them all through the same amp for sure. The same guitar sounds different through two amps so if they have an amp like yours in the shop use it (maybe even take ours in with you).

The Strat is a great playing and very versatile guitar

I think the amp makes the sound more than the guitar. Obviously there are big differences between a strat and a les paul's sound, but I think that the difference in amp sounds is much greater. Especially if you have a solid state vs. a tube amp. You definitely need a tube amp for that vintage sound. Otherwise fenders re-issue strats have a more vintage sound.
