I was thinking of changing the bridge pick up to a humbucker. I think I heard that I would have to change the volume / tone pots? Some thing about the ohms.

Single coil pickup use 250k pots and humbucker use 500k pot. ( generaly ).

But look what the builder of your nex pickup suggest on his web site. It have schematic and informations about pots

You may have to swap the bridge tone pot to 500k and move the tone control wiring for the middle to the neck tone control. You could also use a double stack pot to accomplish this too... Some people compromise and put in 300 ohm pots...
