As mentioned Fender Bullets are not necessary for the guitar. In my opinion they are a little easier to re-string with. I find that ball ended strings often times get stuck and bullet ends do not get stuck as often. I also like the tone Fender strings make.

I have not seen any coated Fender strings. If you are into the coated strings or like another brand, keep playing with your favorites.

I've had the reverse experience - where the bullets stick because the barrel of the bullet will bind in the hole in the trem block.

After reading this entire post, I think there is a basic fact missing from all the posts.

The reason I use Fender strings on my fenders is to reduce wear on the frets. Because the nickel alloy the strings are similar to the Fret alloy, this will reduce wear on the frets. I have done this in the last 4 years because I had to replace the frets on the 1971 Strat. I still use GHS boomers on my Gibsons though. Gibson strings are pricey.

I think most strings are produced from the same factories, but like any company in China, they can make a specialized version(boutique, if you please). So if GHS or D'Addario makes them, you can be sure if the Fender name is on them they meet specifications according to Fender. That is the reason Fender is in the string business.

I couldn't tell you what kind of string is on any guitar just by playing it, unless i personally put the strings on myself. For me as long as they stay in tune, and have the right gauge, they all sound good. I do use my tremelos on both Strats I own, but no string is going to stay in tune. But the tremsetter and locking tuners on the Ultra really helps.
