I was trying to get some of the plastic out from under one of the screws on the pickguard and me being a noob at guitar tech stuff, failed to realize that it was the screw that controls humbucker height adjustment (in the case of my 2000 fender hot rodded series hss). One side (the left side) of the humbucker "fell" into the cavity. No matter how much I turn the screw to the right, the humbucker height doesnt change. Does anyone know how to fix this issue? Thanks for any help you may offer.

Try pulling off the pick guard?

Sounds like you just unscrewed the screw from the pickup. You need to remove the pickguard in order to get it started again.
