The Texas Specials have some of the nicest low ends of any of the pickups I have played.Dont get the highs ,but the rest is pretty sweet.Like TGS , i ended up using a tone pot for the bridge and left the middle open.Really like the sound.

I can vouch for the Tex-Mex pups as I recently bought a Jimmy Vaughn Strat and like TGS said the mid pup has no tone control but the guitar is the closest in sound and feel to an L-series(62-65)Strat that I've tried.

I would have to agree. While you could get Mark Knopfler tone out of a set of Texas Specials, I think that the 57/62s would be a better choice.

Also, mess with your amp settings. Your amp and how it's EQ'd play a significant role in your tone.
