I've got a Mexican Strat (SSS) and I'm putting in texas special pickups. Should replaced anything else? pots? caps? If so, then what kind should i put in?

A rewiring and upgrade of pots, jack, and 5-way switch is inexpensive and will have your MIM up to "American specs" pretty easily. The standard upgrade would be to replace current pots w/ CTS, and the input jack & 5-Way with switchcraft. You might also consider a bassplate for your bridge pickup...again, cheap, and will kill some of the ice-picky tone of your bridge pickup while adding a little low end. Hope that helps.

Ive seen some people with strats wire their tone knobs to the bridge and neck pickups, and leave the middle pickup open. What do you think? and i wonder how that would sound with texas specials

Personally I don't see the reason for removing a pickup tone control, infact I rewired my SRV so the 2nd tone controlled the middle and bridge pickups. Don't get me wrong, 90% of the time my volume and tone knobs are at 10 anyways but in theory taking away the tone control will limit the tones you can make.

i would still have the same amount of pickup tone controls, but i would be able to adjust the bridge tone, not the middle

Just my opinion now ...

Replace the pickups, and leave everything else alone. Don't bother replacing anything until you have an actual reason to do so. While it may not be an MIA, all of your Strat's components are still quite good.
