Fender parts list says 200 volts. Does it have to be 200 volts? Ive seen others use 50 V.

Is there an optimal value?

The voltage value is what looking for, not the capacitance.

You can use pretty much anything. In a direct answer to your question though, A 50V or a 200V tolerance cap is fine as in a typical guitar's circuit, there never will be any where near even 50V passing through it.
