The way the coil is wound is very important to the tone. There is a definite difference in tone based on differences in the winding pattern and tension applied to the wire.

Two pickups of the exact same design, using the exact same materials in their construction can sound way different depending on how the wire is fed on to the coil. Custom pickup makers spend a lot of time developing specific winding patterns to produce a certain tone.
