What are the differences in sound of fender 54 pickups 57/62, and custom shop 69s

Once again I am a hendrix and buddy holly kind of guy.

Would you recommend getting a a 57 vintage reissue strat and swapping pickups for 69 customs

Here's a link to a page that has samples for most of the pups you've mentioned. Use these samples to get a rough idea as to what you are looking for as everyone will sound different depending on gear, style, and most importantly you.

You may want to look at Copperhead Pickups as well. They have their own models of pups and samples of many of the same types of pups you are looking for.

There's plenty of topics about this exact subject on both the Stratocaster and Pickups and Accesories sections of the Fender forum. Do a search a you will find plenty of opinions and info.

And personally I would keep the stock pups in that Vintage RI.

Hendrix and Buddy Holly is broad spectrum!!! Buddy Holly would be like the 54s. The 69s are like the late Hendrix/Woodstock type sound.
