Two who I don't think were mentioned:
Luther Allison... He used Les Pauls too, but he was the ballocks.

(Luthers the one playing a blue Tele)

His son too who isn't well known, but hes the ballocks too - Bernard Allison

Heres Bernard's website too: http://www.bernardallison.com/flash.html

Ronnie Earl - "Hope Radio" - this album came out a couple of years ago, and it is brilliant. Instrumental blues in a variety of styles. Very under-rated player with a fantastic strat tone. I think he plays a '62.

Has anyone else been turned on to Popa Chubby? I've just recently discovered him, and I have to say ... I've been blown away. If you haven't checked him out, I recommend it! Awesome straightforward blues player. Plays a Strat "most" of the time, but I've seen videos of him with other axes. Lots of videos on YOuTube to check out.

Another new and awesome Bluesy Strat player is Philip Sayce. Has been Melissa Etheridge's guitarist for a while but has his own album out now, very firmly in the Blues, Pop, Psychedelic fold. Those are 2 great new players carrying on the Strat Blues tradition.

Thought I'd pass them along.

Try Sonny Landreth, if you'd like a little Cajun flavor with your blues slide guitar.

As Al87 said Rory Gallagher is great, little or no effects and a couple of old AC 30s.Also look into Phillip Sayce from Toronto,ON,Canada he's an amalgam of Jimi,SRV and Jeff Healey with a bit of Buddy Guy for good measure.Happy hunting.
