Just got a new AmStd Strat. What's the best way to get that plastic off of the pickguard and back cover plate?

Welcome to the Forum. There are several methods...What I do is take all the screws and knobs off, lift the unloaded pickguard off, then peel it off in one piece. Sometimes the plastic gets caught on the screws or hardware and I hate little plastic pieces left on the pick guard. This also lets me look in the cavity and see the hardware up close.

Here is a lil trick of the trade my friend Mike that owns Maggio Music in Bklyn showed me a few months back. First let me just say guys if you buy a new ax and really are a player take all the plastic off because your guitar is going to age but not the covered parts. OK i had bought a tele Deluxe on ebay from a store that was NOS the guitar since it was never sold had all the plastic on it and the longer it is on the harder it becomes to get off. So this guitar was almost 3 years old and by myself I would of probably scratched the $@!& out of the pick guard trying to get it off. So since any ax I get from ebay goes right to mike for a set up he was showing me how by leaving the plastic on it almost becomes one with the pick guard as it was not coming off. So he goes watch this takes the pick guard off and squirts a lil lighter fluid on and rubs it into the plastic a few minutes later Bingo clean as a whistle. So this is one to store in the tricks of the trade if needed.
