Hi everyone. Question, what do I have to do to my Strat when I'm going from a .09 E to a .11 or .12 E.

I'm wanting to get a deeper tone but I know there has to be some sort of adjustment.

Thanks.

Depends how fat you want to go :)
The strings must fit comfortable into the nut so it may need to be cut to accommodate the fatter strings. You might get away with .10 or .11 without needing mods.

You may also need to adjust string height and intonation after the change to fatter strings.
Probably good idea to discuss with your shop luthier.

Chanching to .011's probably means widening the nutslots, resetting
neckrelief, adjusting action and intonation and pickup height.
Switching to .010's is easier, no big changes needed.
