If you are having the same issue with a different guitar I would say there is a grounding issue in one of the following:

Guitar cord
Amp
FX setup
The building you are playing in

You will have to go through the process of elimination.

Because you are using Strats it could be just that 60 cycle hum.

What exactly IS the 60 cycle hum? And if it is, do I just live with it? Revel in it (as someone said 'that's what it's all about)?

The "60 cycle hum" inherent in single coil pickups is way more pronounced when playing through tube amps. Since you had been using a solid state setup that's probably why you didn't notice it before. If that is the case, not much can be done to eliminate the hum. Shielding the body cavity iis an option that helps a little.

If the hum diminishes significantly when you touch the bridge, better pickup grounding may also be an option.
