Is it possible to buy the vintage-style Fender PUs fitted to their reissue '57/'62 strats separately?

Just played a vintage '57 in a local shop, and LOVE the tone. Not so enamoured with the 'V' neck, small frets and lack of headstock-end access to the truss rod though!

I'd like to retrofit some vintage style PUs into another strat!

Where from, for genuine Fender ones, I can't find them anywhere on the Fender site, only 'accessory packs'?

Typically any Fender authorized dealer should either have these in stock or be able to order them for you. As Martian pointed out, you can easily Google them for lots of results or you could simply go to your local Guitar Center, Sam Ash or similar guitar store and just order a set.

To see the full list of pickup options that Fender currently offers, you can also look right here at Fender.com...they have their accessories catalog available in PDF format.
