I have a MIM Strat and I was told it had Tex-Mex PUs HSS yet when I took the humbucker out, the back of the metal plate only had the Fender logo on it, is it suppose to also have the word Tex-Mex on it too to identify the PU as Tex Mex?

You're going to have to use the ohm meter to find the "K" value. You should find the value list above or in pickups forum/area.

Resistance is measured (very easily, btw) in Ohms. The K = kilo (as in 1K ohm = 1000 Ohms).

all you need is a multimeter.... then measure it in ohms the black wire to the negative the other one to the positive and the multimeter will tell you the k value :)
