If you want your Strat to sound like a Strat, goe with the Fender Noiseless. If you want your Strat to sound like an SG, go with the Duncan Hot Rail.

I have a hot rails in the bridge position of my american strat. I gives it great sounding distortion and killer sustain. I would go with hot rails in the bridge and vintage noiseless in the neck and mid.

I'd just get a tapable humbucker. That way you could swith between sounds.

I have a semi-related question. Is it easy to switch a single coil out for a humbucker?

As long as the guitar's body and pickguard can accommodate it, yes.

You will likely need to change some pots, too.
