What is the difference between the amount of springs you use on a tremolo?

Tremolo on 2001 American Standard Strat.

I really don't understand your question. You can put up to 5 springs on the one in your photo. I'm probable missing something.

Is there a difference in tone reflecting to the number of springs you have in the tremolo or is it there just for looks?

The springs keep tension on your strings and your whammy bar, allowing them to return to the correct tuning after whammy use.
I sure Chet can tell you more but that's the basics. The more springs the more tension!

So the more springs, the higher the action?

There is a balancing act in setting up a trem. The strings pull in one direction and the springs pull in the other. The screws in the claw are used to adjust the trem to the correct height. 3 springs is usually what is used although some like me use 5. The trem is easier to use if you have 3 springs. There should be no tuning issues with a properly setup guitar.

No, not all. As you tighten the claw screws and/or add trem springs, you add more tension on the trem side, which will pull the bridge closer to the body and requires more force to use the trem arm. The amount of distance the bridge is above the body is called the "float". Fender spec says it should be 1/8" while many people (myself included) go with no float (bridge flush to body) for tuning stability. Search on 'float' for more info.
