Hi guys, I've got a 1990s USA Strat Plus, great guitar but some of the frets are quite worn. Should I get them 'dressed' by a pro, or is it better to get the frets replaced? Is there a danger of wrecking the neck?

Can you only tell that they are worn by looking at them or is the wear causing playing problems?

Red,
Take it to a good luthier and ask his opinion. Much more economical to get the frets dressed. If you have a rosewood fingerboard refretting is not as expensive to do as a maple fingerboard.

It's a maple fingerboard - in great condition

But many frets have a flattened look and in some places there's a kinda shallow V-shaped notch where the string contacts.

That's what I mean.. 'look'. It's not necessarily such a terrible thing unless it's causing you to fret out or buzz or something like that. I actually like it when some of the first five frets get a slight notch in them.
