Man, there are SO many already mentioned that I would have mentioned. Here are a few of my favorites.
Gary Moore, "End of the World" I like the tone on this one! This guy has incredible hands.
Anything by David Gilmour.
All along the Watchtower, Hendrix.
10 Years Gone, Jimmy Page....something about this one I really like.
Dairy of a Madman, Randy Rhoads.

Eddie Van Halen kind of changed everything with Eruption. At the time of it's release, nobody had ever heard anything like it. It still grabs your attention anytime you hear it.

Personally, I'm also a Gilmour fan.

And yes, I think he's playing a strat on this one. If you listen carefully you can hear a typical "string-tree-twing" as he leans on the tremolo bar, in the middle of the solo.

I had never heard this song before! I just checked it out. Thank you! Excellent song!

Hey Hey Stratheads-

I still like the first guitar solo I ever remember hearing as a kid...It made me want to pick up the Guitar-:

The Solo in "Frampton Live Alive"- Do You Feel Like I Do...

Hendrix- "Third Stone From The Sun"

SRV- "Little Wing"

The Freeze

Too hard to answer - ditto on Gilmour. There are faster & more technical players out there, but does any other guitarist play with more soul? Nobody has mentioned Time from PF's Dark Side (maybe it's too obvious), or The Blue from On an Island - wow, dude never misses a note! Here are two obscure faves: Lucky Henry from Walter Becker, and Dominic Miller (Sting's axeman) in Jeremiah Blues Pt. 1 from The Soul Cages - really cool stuff. Good topic.

There are so many timeless solo's to choose from, a couple examples would be Blakmore's "child in time" or Gilmore's "comfortably numb" but if I had to give it to just one solo it would have to be Van Halen's Eruption as heard on the video "live without a net"

The Best thing about watching Eddie Van Halen is how incredibly easy he makes it look.

It should have been: Beat it, if you can!
