If you make any changes to your amp like speakers, tubes or mod it any way, I'd still bring the amp. Once you bring a guitar out of the store, your responsible for it. If it gets stolen or seriously damaged, you bought it. I usually do speaker and tube changes to my amps. I try to bring one if possible. Listening acoustically is a great start, but pups and other electronics can vary greatly effecting the tone.
I only bring an amp if I'm really seriously thinking of making a big investment usually a grand or more. I'll try them at the music shop and have them hold it for me until I bring my amp in. I won't do it for a $300 guitar. I'll just buy it if I like it.

I wanted to thank you all on a lot of great tips. Was wandering also when you are performing an acoustic test do you play some familiar piece that is in your had or sort of play certain chords/arpeggios/scales that can bring out the qualities of a guitar. For instance in the past when I was buying an acoustic guitar I would strum an open G first and feel the vibrations and listen to the tone. After that i would play something that pops in my head at that moment. And the last thing I would check the mechanics.

With strats it is kind of hard to hear acoustically in the noisy store.
