The double bridge pickup you are talking about is called a humbucker pickup which is two singlecoils put together, this humbucker pickup produces a different type of sound than a single coil pickup, strats are mostly known for a three single coil configuration, one in the bridge one in the middle and one in the neck position... the guitars that you mention with the humbucker pickup in the bridge are called FAT strats so a normal strat has a S S S configuration and fat strats have a H S S configuration, humbuckers are also more related to heavy rock sounds because their output is higher than single coil pickups.. you can read all the history of pickups online just do a little research :)
