Well, I'd obviously go for the Strat. But the fact that you mentioned the Mustang twice kinda hints that you maybe have that one on your mind the most.

Highly suggestive - or my name's not

All three guitars have quite different feel and sound. The main difference is the scale length on the Mustang, which is shorter than the other 2. Play them all at your local Fender dealer, and see whazzup.
My first good guitar was a 1979 Fender Musicmaster that is similar to the Mustang. It was a great guitar that fostered my love for Fender products. If you have small hands, you may love the Mustang also.

I like the Stratoaster. You did mention that Mustang twice. Did it speak differently to you than the others did when you played it? Listen to your gut dude.

I've had a Mustang for 35 years and I love it. In more recent times, I've also picked up three Teles (Hwy 1 back in 2002, a 72 reissue Thinline and a 68 resissue Thinline). I also had and sold an MIM Strat and currently have an AmStd.

I'd never give up any of them but if you're only getting one, I'd go with the Strat. It's the most versatile in terms of overall sound and possibly playability as well. But of course, you really have to try 'em all. Bring an objective friend or two along, play a small selection of different styles you'd normally do (keep the amp settings constant) and then think about it. Chances are, one or the other will end up at the top of the list.

If you can have only one go with the most versatile - the Stratocaster.
