Parallel is the common/normal way to connect 2 pickups.

Compared to parallel, series increases the output, rolls off some treble, and fattens the midrange.

On a Strat, while the quack in positions 2&4 is caused by the physical location of the pickups, the tone chages due to series connection may de-emphasize the quack.

Connecting 2 single-coils in parallel is often described as giving a humbucker-like tonal quality. Not exactly the same but similar.

A standard humbucker is basically 2 single coil pickups mounted on one chassis, with one pickup RWRP compared to the other. Those coils are normally connected in series. Switching them to parallel reduces the output, increases the treble, and thins the midrange.

A humbucker with its coils in parallel is often described as giving it a single-coil tonal quality. Not exactly the same but similar.
